Apple stuffed butternut
At my house we have been trying to eat healthy. (Trying is the operative word.)
So this week I have whipped up a cheap and healthy apple filled butternut squash.The best part is, because we are eating seasonal items, it only costs $4.50 for the entire four person meal!
You will need:
3 lbs butternut squash (two medium squash)
2 good size apples
half an onion (optional)
I also added cilantro to this. But that is optional as well.
Directions:
Preheat your oven to 350. Cut the squash down the center length wise and scoop out the seeds.**
Spray the squash with cooking spray and roast facedown in oven for 45 minutes.
While the squash is roasting cut the apple and onion in bite sized chunks and place in the microwave safe dish. Nuke for 5 minutes. Once they have been good and nuked press the apples with a fork or potato masher. You don't want to crush them, just release the juices.
After 45 minutes remove the squash from the oven and fill with the apple mixture. If you want to sprinkle cinnomin over the squash and apples, I highly reccomend it, along with a little salt and pepper.
Place back in the oven for 20 more minutes. You want to make sure your squash is good and done.
Happy eating! **Seeds can be spread out on a baking sheet, sprinkled with garlic salt, and roasted for 15 minutes in a warm oven. These make a great snack.
