Mixed berry Cheese blintzes

 

I've been going to the gym. I know. Growth. I will tell you all about my hilarious adventures with Zumba later.

Saturday morning I got up, put on my bathing suit, refused to look in the mirror and went to my swim class. When I came home we made cheese blintzes. That makes sense.

 I had blueberries and strawberries and ricotta cheese. So I found a crepe recipe online and then improvised my way through the cheese filling.

It was fantastic!

What you'll need:

Crepes:

2 cups skim milk

1 1/2 cups flour  

3 tablespoons melted butter  

2 tablespoons sugar 

2 eggs

1/2 teaspoon baking powder

Cheese filling:
2 cups part skim ricotta cheese
1/3 cup cream cheese
2 tbsp sugar
1/4 milk
1 cup blue berries
Strawberry topping:
2 cups sliced strawberries
1/4 honey
1/4 cup water
Crepes:
Spray pan and warm up over low to medium heat.
In a bowl combine your milk and butter, whisk in flour, sugar and baking powder.
Pour 1/3 cup of the mixture into your pan. Rotate the pan to make sure it gets fully coated. Once the top part of the crepe begins to solidify (after about 90 seconds) flip! Then cook another 90 seconds.
The crepe will slide right off the pan.
Filling:
In a bowl combine your cheese, sugar and milk.
Stir in your blueberries. I like to mash my berries just a smidgen.
Topping:
Place your sliced strawberries in a pot with your water and honey. Bring to a boil and then simmer until they have reduced.
Fill your crepes with the cheese/blue berry mixture. Fold like a burrito and top with your strawberries.
They will be so delicous.
