Applesauce Cinnamon Muffins

A friend recently was sweet enough to give me an aloe plant. I put on Facebook that I wanted one and she was quick to swoop in with an offer.
Where I am from you cannot accept a generous gift without a thank you of your own. So what did I give my sweet friend in exchange for the hand raised aloe plant she had so generously handed over? Muffins of course! I'm southern. I can't help it. I have the need to feed!
This is my basic muffin recipe with a few exchanges (applesauce for butter) and a few things added in (vanilla, cinnamon) you need a basic muffin recipe in your back pocket.
2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt (optional if doesn't impact the taste)
3/4 cup white sugar
1 egg
1 cup milk
1/4 apple sauce (butter, vegetable oil work too)
1 tsp vanilla flavoring
2 tbsp cinnamon- yeah, I like A LOT of cinnamon
Preheat your oven to 400 and get your muffin pan together. I used a "Texas Muffin Pan" my mother gave me. It still works in Alabama.
In a bowl combine your flour, salt, and baking powder. Add in your sugar, eggs, milk and apple sauce - making sure it thoroughly mixed. There might be a few pockets of air, that's okay. It doesn't have to be totally smooth. Add your vanilla and cinnamon.
Pour in your muffin pans and bake for 20 minutes.
I made muffins for my friend, but I had to have Beardface UnStoppable test them (since I am off sugar) so I only have 5 to give. But I was assured they were great.
