Mashed Faux-Tatoes (Spoiler: It's Cauliflower)

Do you love mashed potatoes? I love mashed potatoes. But alas, we have gone potato free in this house. And sugar free and pasta free and bread free. It's a meager existence. I am ill. And by ill I am talking about mean as snake.

But I digress.

My husband loves mashed potatoes and a few years back I made Mashed Faux-tatoes. I loaded them down with all sorts of bad stuff like cheese and cream. Here is a healthier version of that recipe.

What you'll need:

16- ounce bag of cauliflower, steamed

1/4 cup bleu cheese or gorgonzola, etc. etc.

2 tbsp sour cream

a little kosher salt.

Start by steaming that cauliflower. You can use a steamer pot or the microwave.You will need to blot with a paper towel to remove some of the moisture or you will have a runny side dish. Gross.

Add you sour cream and cheese.

Mash a little.

Then place in blender or food processor and blend.

Voila! They are so good!

I tried this recipe tonight. I didn't put them in the blender so they didn't look like yours, but they were tasty! Thanks!
