Cauliflower Pizza Crust

I love pizza. Love it. I mean like a 15 year old boy loves it. I just love it.
But because we don't eat bread or anything that resembles bread during the week (at least for now) I don't get pizza very often. Enter Cauliflower Pizza Crust.
At first I was skeptical. I have made Cauliflower Mashed Fauxtatoes and I'm not going to lie, they aren't as good as the real thing. But this crust held it's own. It wasn't buttery and flakey like a pizza crust, but it had a good flavor and texture.
What you'll need: (This recipe will yield one large then crust or one small pan pizza)
Two cups steamed cauliflower, riced (ricing just refers to grating or dicing the cauliflower until it looks like rice) About half a head of cauliflower is two steamed cups
2 eggs
1 cup parmesan cheese
Italian seasoning, oregano, basil, garlic powder etc. etc.
Tomato sauce (preferably sugar free)
Mozzarella cheese
Your favorite pizza toppings
Preheat oven to 350 and grease your pan
Rice that cauliflower by dicing it into very small pieces, you can also use a cheese grater or food processor.
Mix cauliflower with eggs, cheese and seasoning. Then by all means- take a very blurry photo of it!
Place in oven and let bake 15 - 20 minutes. Isn't that gorgeous?
Cover with your toppings and bake for another 10 - 15 minutes.
