Guilt-Free Strawberry Muffins (A Fake and Bake Recipe)

Last week, on the Five4Five Meals Facebook page I asked some of you if you alternatives to oil in your cake mixes. I got a yes on Greek yogurt, sweet potato puree and diet coke.
I am not that brave and I hate the idea of wasting ingredients if I don't like something. But I wanted to make some delicious strawberry muffins for Valentines Day and I wanted to see if I could modify a yellow cake mix recipe because, well I am tired and I didn't feel like measuring sugar and flour.
If you don't like box mixes try this DIY yellow cake mix.
Oh. My. Goodness. These were the most moist and delicious muffins I have ever made, had or eaten. And you probably have everything you need to make them at your house already.
What you'll need:
1 16 ounce box yellow cake mix (I recommend Duncan Hines)
1 6 ounce container Greek yogurt. You can use plain but I used strawberry, because it's what I had.
2 tbsp milk
2 eggs
1/4 cup LOW SUGAR strawberry preserves. (If you make your own preserves I bet these would be even more yummy!)
Preheat your oven to 350.
In a mixing bowl combine your cake mix, yogurt and milk. Beat your eggs in a seperate bowl and then add them. Mix thoroughly.
Then add your preserves, but don't mix. Just fold them so it's more of a swirl.
Bake for 15 - 20 minutes. This recipe yielded 14 standard sized muffins. I used SparkPeople to compile the nutrition facts for you. Each muffin has four grams of fat and about 170 calories. Yum, right?
