Pork roast and sweet potatoes slow cooked in Apple Butter

Let's sing: "I made an apple butter roast and some sweet potatoes..." You know you heard Flo Rida in your head.
Ah, Flo Rida, he has made such a musical contribution to his generation, said no one ever.
Last week I made one of Jason's favorite dishes- a pork roast and sweet potatoes slow cooked in apple butter. It's super simple and super tasty but feels super decadent.
It's a three ingredient meal and you have to love that!
What you'll need:
One medium sized pork roast (boneless or bone in, it doesn't matter)
4 cups apple butter- I reccomend making your own using this technique. Then you can control the sugar content.
3 large sweet potatoes, diced
Spray your slow cooker with cooking spray.
Add your sweet potatoes.
Put the pork in the pot. And cover with apple butter. You can add a little bit of water if you want, but you don't have to. Turn the slow cooker on low and cook for about six hours.
It is truly delicous and a great fall meal. You could even save it for Christmas.
