How I've spent my Thursday

I woke up Wednesday feeling ick. But it took several hours for me to start getting sick.
Boy it was bad. I couldn't keep down water. So at 11 p.m. Jason put me in the car and drove me to the ER.
I was severely dehydrated and as a result having mild contractions. It was all scary.
But I've had this old children's song in my head the whole time. "My God is so big, so strong and so mighty there's nothing my God cannot do..."
I'm okay and the baby is great and will "cook" a little longer. I'm reminded that God is good. Now, if only we could get released so I can go home!

Easy, Cheesy Ham and Spinach Quiche

Is there anything easier, more delicious and more economical than making a quiche with leftovers?

Last night I made this easy, cheesy ham and spinach quiche. It's quick to throw together and is pretty economical. Some eggs, spinach, a little cheese and leftover ham. You can't go wrong with that.

Exciting Spring Projects are on the Way! 

Here in South Alabama it is sunny and warm. The lemonade is in the pitcher and we've switched from our winter flip flops to our spring flip flops. 

I've got some exciting Spring projects coming up thanks to my friends at The Home Depot. I am hoping to do a little gardening and a lot of playing with my boys.

Meal Plan Monday 4-1-13

Happy April! Did everyone have a wonderful Easter weekend? We did. 

 

We took little man to the zoo. 

This was attempt 1 this weekend at a family photo. 

Then my mother-in-law came for a visit. She was sweet enough to get up with the baby in the wee small hours of the morning after Jason and I spent several hours Friday night wrestling him to sleep. Then Saturday night she got him in the bed where he slept for 10 hours straight. MIRACLE WORKER!

Then we went to Church for Easter. It was a wonderful service and worship at our church is always great. 

This was attempt 2 at a family photo. Clearly we are pros at this. Right?

So, here is our Meal Plan Monday. Lots of leftover ham and chicken this week. Tuesday I will be doing some MAJOR freezer cooking. 

Monday: Chicken and Rice Casserole with Fruit Salad 

Tuesday: Ham Puffs and Roasted Green Beans 

Wednesday: Ham and Pineapple Stromboli with Roasted Brussel Sprouts 

Thursday: Spinach and Ham Quiche with Fruit Salad 

Friday: Pesto Chicken Pizza  and Fruit Salad
