A day in the life of a work at home mama

I tried and tried for weeks to get my baby to adhere to a schedule. Then I realized scheduling a baby was like trying to stop a flood with a plastic spoon. It was a sign of my own insanity. So I took three deep breathes and calmed myself right on down. That's when we fell into a routine.

Eats for the Cheaps: Cajun Chicken Pasta

So recently I saw a delicious recipe for Cajun Chicken Pasta on one of my favorite food blogs. I decided for this week's Eats for Cheaps I would modify that recipe (greatly) for those of us cooking on a budget.

This recipe is still delicious. I mean delicious even without the called for wine and heavy cream- although I am sure that would have been even more amazing. Best of all it only cost me $4.92 to make, thanks in part to a chicken sale at Walmart and a pasta sale at Publix (when are they not having a pasta sale?). Click here for more.

Homemade yogurt- easier than it sounds

I love yogurt. My baby loves yogurt. We all scream for yogurt! Okay, we don't scream. It's not like it's Ben and Jerry's but whatever.

We have been eating so much yogurt that it gets expensive. Also, it has a lot of sugar in it. So I decided to make my own plain yogurt.

It turned out pretty good and I was able to make 72 ounces for around $4! That saves me $.07 an ounce, or 50 percent off. Yes. I did the math. I love saving money that much. Of course, if I hadn't used organic milk and starter yogurt it would have been cheaper. Click here for more.

Meal Plan Monday

Okay, another busy week ahead of us at this house. New clients to work with. (Yay!) New feeding and nap schedule (boo!) and trying to get this house clean... for once.

Here is our meal plan for this week:

Monday- Pork roast

Tuesday- Baked Chicken thighs with crash hot potatoes and

Wenesday-Cajun Chicken Pasta. This will be the first time I tried this.

Thursday- Chicken enchiladias

Friday- Loaded Potatoe soup

Saturday- Fish FRY!

Sunday- Leftovers

Baked blueberry banana oatmeal!

Baked banana, blueberry oatmeal! Yes, it's worth an exclamation point. I am literally exclaiming about baked oatmeal.

It is creamy and hearty and delicious and pretty healthy. The banana and blueberry pairing balance each other out very well.
