Meal Plan Monday 2-15-13

Happy Monday! I hope you all had a wonderful weekend. I was happy to spend time with my boys.

Who wouldn't want to spend all their time with these two? I mean look at those faces!!

But here we are at another Monday. We have a great giveaway this week! I have some work projects to finish, I need to get my house clean for my mother-in-law to come and visit and of course, I have got to get things ready for our new baby boy who is coming in just 12 more weeks (give or take)!

So, here is our Meal Plan Monday.

Monday: BBQ Pineapple Chicken in the crock pot. You just dump chicken breasts, thighs or leg quarters in your slow cooker with a bottle of your favorite BBQ sauce and a can of pineapple! I am going to serve this with brown rice and roasted brussel sprouts. 

Tuesday: Lasagna. Did you know you NEVER have to boil lasagna noodles? Even if you don't get the oven ready kind? I am making mine with venison because I have a freezer full (how redneck do I sound?!) and cottage cheese because you really can't tell a difference sometimes and that's how The Pioneer Woman does it. 

Wednesday: Pizza Pot Pie with roasted green beens. 

Thursday: Summer Ravioli 

Friday: Tilapia Tacos!

Prosciutto and Kale with Orzo 

One of my favorite things to make is a pizza with caramelized onions and prosciutto. The salty and the sweet are incredible together.

What if I took my favorite elements of the pizza and made pasta I could throw in some baby bella mushrooms and the kale and the meaty baby bella and the bitter kale would balance each other. Right? Yes!
