Prosciutto and Kale with Orzo 

One of my favorite things to make is a pizza with caramelized onions and prosciutto. The salty and the sweet are incredible together.

What if I took my favorite elements of the pizza and made pasta I could throw in some baby bella mushrooms and the kale and the meaty baby bella and the bitter kale would balance each other. Right? Yes!

Homemade Butter in 2 Minutes with video tutorial

Do you love creamy, rich butter? I know I do. Which is why I wear giant stretchy pants. We actually don't eat an inordinate amount of butter at our house, usually just Saturday mornings when we have our weekly pancake breakfast.

I have wondered for a long time how to make butter at home using fresh cream. I decided to give it a try.

Meal Plan Monday 2-18-13

Good morning! It's a beautiful and cold Monday morning here in South Alabama. 36 degrees and I love it. Did you all have a wonderful weekend?

I hope so. We finally got the new baby boy a crib. Only 13 weeks to go! 

This week we have a lot of crock pot meals happening. And that's just fine.

Monday: Sausage Pepper Bake . This is by far one of the easiest things you can make. It's peppers, sausage, potatoes and onions roasted for 40 minutes. Super simple. 

Tuesday: Roast Chicken with Roast Vegetables

Wednesday: BBQ Chicken Pizza made with leftover chicken. Try this pizza crust. 

Thursday: Taco Pie. This is a new recipe I am trying. 

Friday: Slow Cooker Lasagna. I'll let you know how this goes.

Guilt-Free Strawberry Muffins (A Fake and Bake Recipe)

Last week, on the Five4Five Meals Facebook page I asked some of you if you alternatives to oil in your cake mixes. I got a yes on Greek yogurt, sweet potato puree and diet coke. 

I am not that brave and I hate the idea of wasting ingredients if I don't like something. But I wanted to make some delicious strawberry muffins for Valentines Day and I wanted to see if I could modify a yellow cake mix recipe because, well I am tired and I didn't feel like measuring sugar and flour. 

Oh. My. Goodness. These were the most moist and delicious muffins I have ever made, had or eaten. And you probably have everything you need to make them at your house already. Click here for more.
