Easy Baked Oatmeal

My family loves this easy-baked oatmeal. I will often double the recipe and freeze half. The key is to freeze UNCOOKED. I also compile the ingredients and let it sit in the fridge overnight.

Bake at 375 for 45 minutes and you’re GOLDEN!

What you need:

  • 2 large eggs

  • 1/2 cup packed brown sugar

  • 1/2 tablespoon baking powder

  • 1/2 tablespoon vanilla (I don’t actually measure)

  • 1 teaspoon cinnamon (I don’t measure that either)

  • 1/4 teaspoon kosher salt

  • 1/4 cup butter, melted

  • 1 1/4 cups milk (ANY kind)

  • 3 cups (old-fashioned rolled oats and quick oats work well.)

  • 1 cup frozen blueberries to mix in or top

Add all your dry ingredients together. Then combine your wet ingreidents. Stir together. Pour in a greased 8 by 8 pan. (A regular casserole dish works too!) Bake at 375 for 45 minutes.
